v1.1.2: Fix server reconnection, sync progress, and seed phrase handling

Bump version to 1.1.0 and unify signing config
- Bump versionName to 1.1.0 and versionCode to 1_01_00_800 - Use placeholder keystore for debug builds to match release signing
